Christmas Soup

Ingredients

Extra-Virgin Olive oil
1 pound bulk Italian sausage
1 pound of bacon, diced
1 large yellow onion, diced
5 cloves of garlic, minced
Kosher salt
1 teaspoon crushed red pepper (or to taste)
5 russet potatoes, cleaned and cut up
Black pepper
1 teaspoon fennel seed
1 quart reduced-sodium chicken broth
1 pint heavy whipping cream
1/2 cup grated Parmigiano-Reggiano cheese
1 bunch kale, thoroughly cleaned and roughly chopped
1/4 teaspoon grated nutmeg

Drunken Cranberry Sauce

Ingredients

1 bag fresh cranberries
1 cup water
1 cup sugar
1/4 cup Grand Marnier (orange liqueur)
Peel and juice of 1 orange
1 tsp. grated fresh ginger root (or can use ground)
1 tsp. nutmeg
1 tsp. cinnamon

Ingredients

24 stalks asparagus, trimmed and cleaned
1/8 ts salt
1/8 ts black pepper
1/4 ts dried italian seasoning
2 tb grated Parmesan
8 slices thinly sliced prosciutto

Autumn Stuffed Pumpkin

Ingredients

1/2 box bread stuffing
1 small yellow onion, minced
1 stalk celery, minced
1/4 cup golden raisins
1/4 cup chopped walnuts
1 1/2 cups water
1 tablespoon minced parsley
Olive oil
1 4-5 lb sugar pumpkin, cleaned and rinsed with cold water inside and out. Leave wet and add a few dashes of sea salt to the interior.
