Candy Cane Cannoli

Ingredients

8-10 cannoli shells, homemade or purchased
1/2 cup crushed peppermint candies or canes, divided
2 ounces semisweet or bittersweet chocolate, melted and cooled
1 cup (8 oz.) mascarpone cheese
2 tablespoons powdered sugar
1/4 teaspoon peppermint extract, or to taste
2-3 drops red food coloring, optional

1 cup graham cracker crumbs
1 teaspoon vanilla
1/2 cup crunchy peanut butter
